Peruvian healthy fast-food chain to become a reality soon

Fast-food businesses offering healthy, nutritious Peruvian typical food will become a reality next year thanks to the efforts made by Peruvian Society of Gastronomy (Apega) in cooperation with public institutions and private businessmen.

According to Apega Vice Chairman Mariano Valderrama, this will be possible thanks to the support of Production Ministry Technology Innovation Fund, which disbursed S/.500,000 (about US$155,569) to subsidize a technology innovation agenda in the gastronomy industry.

“One of the steps to such an initiative is to establish a Peruvian fast food alternative chain,” he told Andina news agency.

To Valderrama, the idea will satisfy the need of Peruvian consumers, who opt to use the service as they are not able to return home due to the distance, or because their wives also work and have no time to cook. 

“It is also important to think of school meals and the food served at hospitals. We definitely need standardized foods that can be processed, so that people have access to inexpensive and healthy meals in a short time,” he pointed out.

First, consultants will be called to learn from the management of existing fast food franchises.

“We need to change or learn from some aspects. Some of our partners are already developing new mechanisms and even working at clinics and schools offering healthy food. We have to put our efforts together to see how realizable it will be to establish a Peruvian fast food chain,” he noted.

Learning from machine building experiences occurring in Villa El Salvador district (Lima) and Arequipa –where a gastronomy-related industry is being developed– is another step that has to be taken.
 
Besides observing the day to day work of international franchises operating in the country, he added, we also have to determine which dishes can be considered as pre-prepared to be included in the Peruvian fast food menu.
