Peruvian food to be served at United Nations gala dinner in Switzerland

Ceviche, leche de trigre, paiche fish, traditional Pisco sour and chilcano drinks will be served to 400 guests expected to attend the gala dinner celebration of the 70th Anniversary of the United Nations (UN) to take place in Geneva (Switzerland) on October 31.

The Peruvian team will be composed of 10 cooks, who will be in charge of preparing Peru's culinary delicacies.

On this occasion, 50 kilograms of paiche fish were taken to Switzerland for the main dish, which will be accompanied by Amazonian sauce and Chonta salad. The entrée will feature croaker ceviche and Leche de Tigre, Peruvian term for the citrus-based marinade that unites the seafood in a ceviche.

Afterwards, cocoa dessert, ice cream and coffee will be put on the tables. Likewise, guests will enjoy Pisco Sour and chilcano prepared by a Lima's Central restaurant expert.

On the other hand, Geneva-based Peruvian Ambassador to the United Nations Luis Chavez Basagoitia said the dishes were chosen for this event due to international recognition.

It must be noted Ceviche is typically made from fresh raw fish marinated in citrus juices such as lemon or lime.
