Experts attending the Culinary Institute of America's recent Worlds of Flavor conference in California have predicted that Peruvian food will be one of the big culinary trends of 2014.

According to an article from USA Today, Peruvian cuisine combines ancient ingredients of the Incas with foods brought by Spanish conquistadors.

"Peru offers tremendous diversity. Dishes reflect the sea, the Amazon jungle and the Andes mountains," explains Virgilio Martinez, chef/owner of Central Restaurante in Lima, Peru and Lima in London.

"The country has thousands of varieties of potatoes and nearly equal variety of corn and quinoa," he told USA Today.

The publication also lists food from the Philippines, New Nordic cuisine, “Next-Mex” (modern Mexican cooking) as becoming international food trends in the coming year.

They also predict that comfort food will make a classy comeback in hip restaurants around the nation, and that ingredients like turkey and quinoa will get some more attention in the new year.

The Culinary Institute of America's annual Worlds of Flavor conference was held in California's Napa Valley in mid-November.
