Lima, Jul. 03 (ANDINA).- The restaurant chain owned by Peruvian chef Gaston Acurio was considered by the influential Spanish newspaper El País as "a Latin American multinational firm", which is beginning to spread into other regions such as Europe, and represents a development platform for the Andean region.
According to the article entitled “Empresas latinas en escena global” (Latin American firms in the global scene) ‘Astrid y Gaston’, our compatriot’s chain, is promoting indigenous agricultural products of the Peruvian cuisine, and is a good example of product innovation of "Latin American firms in the world."
In addition to Lima, the Peruvian restaurant chain Astrid y Gaston has opened locations in cities like Quito, Santiago de Chile, Bogotá, Caracas, Mexico, Madrid and Panama, becoming the ambassador of Peruvian cuisine in the world.
"Chilean wine companies, the Brazilian natural products company ‘Natura’, and the rediscovery of indigenous agricultural products of Peruvian cuisine by ‘Astrid y Gaston’ are good examples of product innovation for Latin American firms in the world," says the author, Lourdes Casanova, a lecturer at the Strategy Department at INSEAD, and author of Global Latinas, Latin America's emerging multinationals Hampshire.
According to Casanova, these Latin American multinationals represent an innovation platform for the Andean region, and highlights the case of Cemex (Cementos Mexicanos), the Mexican cement giant, which is considered an innovative business model with the latest technology.
